I never thought I would be one of “those” people. Hemp eating, organic choosing, HEALTHY lifestyle people. It snuck up on me, honest. What I do know myself as is Frugal. So as Halloween wraps up and the pumpkins sit there uncarved (best laid plans of mice and men) there was no way those gourds were just hitting the trash!
My husband is amazing! He quartered the monstrosities and scooped goop for me, rinsing the seeds for his favourite post-Halloween treat- roasted pumpkin seeds! Then, once the heavy work was done I baked the pumpkins until their meat was soft and set them aside to cool. ( you can also read this as ‘ I got lazy and didn’t feel like scraping and bagging until 9 pm when I knew I had to do something with it! LOL)
Last night’s fresh snow did inspire the desire for the house to smell like rich earthy Home smells- ginger, nutmeg, allspice, cinnamon- which works well given the 24 plus cups of pumpkin I now have bagged on my counter!
